Homemade muesli

I’m not a big fan of store-bought muesli, at least not the selection we have here in Denmark… So I make my own. It varies from time to time, depending on what ingredients I have at home. This is the recipe for the batch I made last and it was quite good if I do say so myself. I


1 cup of oatmeal

2 cups of barley

1 cup of almonds

1 cup of Hazelnuts

2 cups of Coconut flakes

A handful of flaxseeds

A handful of sesame seeds

2 cups o Sunflower seeds

1 handful of dried cranberries

1 handful of raisins

3 tbsp. honey


Heat the oven to 180 degrees C

Chop the almonds, hazelnuts and flax seed roughly. Mix it with the rest of the ingredients – except the honey – in a bowl.

Add the mixture to a baking tray with greaseproof paper. Make sure it is all in an even layer. Pour honey over and put the tray in the preheated oven for approx. 20 minutes. Keep an eye on it and  stir the mixture around a bit 2-3 times during the 20 minutes. Add a bit of extra honey along the way if needed.

Take the tray out and let the müsli cool completely before pouring it into a container  or jar.
