Marzipan cupcakes with strawberries and cream
I made these cupcakes a few months back but never put them up here because I really wasn’t happy with the pictures. But the cupcakes were so delicious and good that I have now decided to put them up anyway. I’ll make them again another time and make sure to take better photos.
I found this recipe on another blog that I read regularly. Its an adaptation of a traditional Danish summer cake. I absolutely love it! It is filled with everything that delicious; marzipan, dark chocolate, cream and fresh strawberries – need I say more.
Makes 12 cupcakes
135 g of sugar
175 g of butter
200 g of marzipan, grated
1/2 dl of milk
150 g of flour
1 tsp. of baking powder
1 tub of mascarpone, about 250 g.
grated zest of one lemon
Seeds from one vanilla pod
2 dl. of cream, whipped
100 g dark chocolate
a tray fresh strawberries
Turn the oven on to 200 degrees C.
Add 12 muffin cups into a muffin tin.
Mix sugar and butter until fluffy. Then add 1 egg at a time, whisking thoroughly.
Grate the marzipan coarsely and stir into the batter. Then add the flour and baking powder and stir into batter.
Finally add the milk and stir the batter for a minute or two, until smooth.
Pour the batter into the muffin cups and bake for approx. 20 minutes.
Let the cupcakes cool completely on a wire rack.
Melt the chocolate and coat the cooled cupcakes.
When the chocolate has hardened completely, whip the mascarpone with vanilla seeds and grated lemon peel light and airy. Whip the cream and add the whipped cream to the mascarpone mixture. Do this carefully with a spatula in order not to loose the airiness. Now decorate the cupcakes with the cream mixture and finally cut the strawberries into halves or quarters.
