Healthy, crunchy beetroot salad with avocado, pomegranates and almonds
Here’s a really simple, crunchy and healthy winter salad. I had this salad for lunch, so the recipe is for one person.
2 medium sized beets
Half an avocado
Seeds from half a pomegranate
A handful of almonds
1 tablespoon of sesame seeds
Juice form half a lemon
2-3 tablespoons of olive oil
Salt and pepper
What to do;
Peel and grate the beets roots on the course side of the grater. Add to a bowl.
Roughly chop the almonds.
Cut half of an avocado into slices or bite size pieces.
Add the almonds and avocado to the bowl along with the seeds from half a pomegranate.
Sprinkle a tablespoon of sesame seeds over the salad.
Make the dressing by mixing the juice of half a lemon, olive oil, salt and pepper.
Drizzle over the salad and toss.
