Dinner for one – Stuffed chicken breast, pesto pasta and roasted cherry tomatoes

I’m home alone tonight so it was dinner for one – a delicious dinner for one. I love the combination of fresh basil, mozzarella and tomatoes. And I had a chicken breast in the fridge so I made myself a little caprese inspired dinner.
Ingredients;
1 chicken breast
2 slices of parma ham
Fresh mozzarella (I used a packet of mini mozzarella balls)
Fresh basil
Garlic cream cheese
Cherry tomatoes – still on the vine if you can find it
Fresh pasta
Green pesto
Olive oil
Salt and Pepper
Procedure;
Turn your oven on to 200 degrees C
Place the tomatoes in an oven safe tray, drizzle olive oil over and season with salt and pepper. Place in the oven for about an hour.
Prepare the chicken breast by slicing a little pocket in the side of the breast. Spread some garlic cream cheese inside and stuff with fresh basil, slices of mozzarella and slices of cherry tomatoes. Wrap two pieces of Parma ham around the breast. If you have cooking string, tie a bit of that around the chicken breast to hold everything together. When the tomatoes have been in the oven for half an hour, place the chicken breast right beside it in the oven.
10 minutes before the timer goes off, cook the pasta,. When done, drain and keep the pasta in the pot. Add pesto in the pot, I used 2 teaspoons. Stir it around; making sure all the pasta is coated nicely with pesto.
The chicken and tomatoes should be done by now. Take them out of the oven, remove the cooking string and place the chicken and tomatoes on a plate with a bit of pasta, fresh basil and mozzarella.
