I love this dessert, it’s super easy, delicious and you can use a large variety of fruits and berries and even change up the topping ingredients. I usually have apple crumble with oatmeal crumble, but this week I wanted to try and make it a bit more summery by using a mixture of berries. I love marzipan and had a bit left over in the fridge, so I decided to add some of that to the crumble. I will be doing that again, because that was just so delicious. I used frozen berries but fresh will of course work just as well.
What kind of crumble cakes to you guys usually make?
Ingredients for berry mixture:
100 g blueberries – fresh or frozen
100 g raspberries – fresh or frozen
50 g strawberries – fresh or frozen
2 tbsp. water
50 g sugar
2 tbsp. of corn flower
1 vanilla pod
Put a pot on the stove on medium to high heat. Add all of the berries, water and sugar to the pot. Scrape out the beans from the vanilla pod and add both beans and the rest of the pod to the fruit mix. Bring it to a boil while you stir occasionally. Add the corn flower to thicken the berry mixture. When the mixture has texture you like, remove the pot from the stove. Fill a small ramekins or another oven proof dish with the berry mixture. Now make the crumble!
Marzipan/ oatmeal-crumble ingredients:
50 g butter
20 g cane sugar
40 g plain flour
60 g oatmeal
40 g of marzipan
Turn the oven on to 180 degrees C.
Grate the marzipan in the coarse side of the grater. Cut the butter into cubes. Now add all of the ingredients into a bowl and mix everything together with your hands until you have a mixture that looks a bit like breadcrumbs.
Spread the crumble over the berries and bake in the oven for 20 to 25 minutes – depending on the size of your dish.
Enjoy with a scoop of vanilla ice cream of a dollop of sour cream. Yum, I love this dessert!
