Ginger pears with white chocolate mousse – made with a siphon
For my birthday last year, Sillas gave me a fancy cream siphon. Its so cool, and it came with a little recipe book full of savory and sweet recipes. Amazing how many fun things you can make with a siphon. But somehow a whole year passed and I still had not used it. Ahh the guilt! So this year on my birthday, Sillas cooked us a couple of amazing steaks and I made the dessert using my siphon. And I can’t believe it took me a whole year to start using it. Its so much fun!
I started with a simple dessert: Ginger pears with wonderful white chocolate mousse.
Here is the recipe from the little recipe book from Mastrad.
Ingredients: Serves 4.
200 g white chocolate
50 g icing sugar
50 g dark chocolate
10 g butter
250 ml full fat cream
1 egg yolk
1 can of pears in syrup
fresh ginger, about 10 cm.
Melt the white chocolate in a bain-marie. Remove from the heat and add 1 whole egg plus the egg yolk. Mix well.
Add the cream, icing sugar and mix carefully.
Pour the mixture into the base of the siphon, insert gas charger, shake and place in the fridge for 3 hours. *
Peel and grate the ginger.
Melt the butter in a pan, place the pears (and their syrup) and the grated ginger in the pan and sauté quickly. Remove from the heat and let cool.
Place the pieces of pear in a couple of glasses and squirt the white chocolate mousse over them. ( Make sure you shake the siphon before using it and hold it upside down when squirting the mousse)
Decorate with grated dark chocolate.
*A note to inserting the gas charger.
Make sure that the top of the siphon is tightly closed, otherwise the gas will leak out with charging.
When charging the gas you should hear gas filling the chamber—and then silence . Don’t stop screwing the charger on when you hear the hissing sound, just keep going and all will be good.
