Fresh and crunchy salad

Whenever we have salad for dinner – or as a side- I try not to make the same old tomato, lettuce and cucumber mix. I want to make something different, fresh and a bit creative. And this salad is a new favorite to my salad repertoire.
I found the recipe here the other week when I was surfing other blogs and it looked so delicious that I made it that evening as a side to chicken.
I love that is has a lot of crunch, freshness and still a bit of creaminess from the avocado.
Ingredients
1 bag sugar snap peas – about 200 g
1 cucumber
1 avocado
1 mango
1 handful of peanuts
1 carrot
A bunch of basil
Method
Cut the snow peas at an angle
Cut the cucumber in half, remove the seeds and cut into thin slices.
Chop the avocado, carrots and mango into cubes.
Chop peanuts
Mix together and garnish with torn basil.
Marinade
1 green chilli
10 cm ginger
2 tbsp. avocado oil
Juice from 1 lime
1 tsp. salt
3 cloves of garlic
Method
Finely chop the chilli.
Grate the ginger and garlic.
Mix together with avocado oil and lime juice.
Season with salt.
