Hazelnut nougat and chocolate chip cookies

This weekend was full of fun birthday celebrations. First a great and really fun 30th birthday party on Saturday and then a sweet and cozy 5th birthday party on Sunday. So a wonderful and eventful weekend with great great company. Instead of bringing flowers as a hostess gift I decided to bring a batch of homemade cookies on Sunday.
The recipe is from my new cookbook ‘happiness is chocolate’ – a Danish chocolate cookbook by two food – or should I say, chocolate bloggers. I have followed their blogs for a couple of years and absolutely love their new joint cookbook. I added a bit of vanilla to the recipe because you can almost never go wrong with a bit of vanilla when you’re baking
The nougat used in this recipe is the typical Scandinavian soft hazelnut nougat. It’s a bit like solid Nutella – very very delicious!
The cookies are yummy, crunchy and full of hazelnutty goodness.
Ingredients:
100g soft butter
155g brown sugar
1 egg
150 g of wheat flour
½ teaspoon baking powder
1 teaspoon of vanilla sugar
¼ teaspoon salt
100g dark chocolate
100g refrigerator cold nougat
Method:
Preheat oven to 180 degrees C.
Whisk butter and brown sugar together in a bowl to creamy and light airy texture. Add the egg. Mix flour, baking powder and salt in a bowl and slowly add it to the butter mixture. Chop the chocolate coarsely and cut the nougat into cubes. Fold chocolate and nougat in the dough. Shape the dough into balls. Place them on a baking sheet with baking paper. Bake for 12-14 minutes until they are light brown. Let them cool on a wire rack.
