Raspberry and limeade
How beautiful is the colour of this raspberry-limeade? I wanted to try this recipe out when I saw that my local grocery store had fresh raspberries on sale at a very good price this entire month.
The weather today has been quite weird really. It started out with beautiful sunny summer weather, so I decided to take a long walk around my neighborhood of Frederiksberg. Lots of people were out enjoying the weather, sitting outside cafés with a cup of coffee and a little pastry. It was an amazing walk; bought a bouquet of flowers, had a passion fruit smoothie, spotted a celebrity and stopped for a quick talk with a few neighbors I met at a sidewalk café. But about 30 minutes after I got home, the weather changed and it was pouring down. So glad I made it home in time. And what do you (or I in this case) do when the weather grey and boring? Go to work in the kitchen and make something beautiful.
So that’s when I made this wonderful raspberry and limeade. It’s easy to make and you just have to wait the cooling down stage, otherwise its quite quick to make as well. Its really good with just a bunch of ice cubes, but you could also add to a cocktail or pouring it over your dessert.
300 g of raspberries
1 liter of water
1 dl of honey
¼ dl of lime juice
Pour raspberries, water, honey and lime juice in a pot and slowly bring it to a boil. Leave to simmer for 20 minutes and then turn off the heat, leaving the pot of raspberry-limeade to rest for an hour.
Pour the juice through a sieve into bowl or jar. Then filter it once or twice more through a coffee or tea filter. Leave the juice in the fridge to cool down. Serve with lots of ice cubes.
