Pumpkin Pie with Maple Whipped Cream

Autumn is here! And as much as I love summer and will miss the warm(ish) weather, long summer nights and trips to the beach I also look forward to the new season. Spending evenings at home wrapped in a warm blanket with cup of hot tea and a piece of pie. That’s another thing I love about a new season- a new array of cakes and pies baked especially for this time of year. Like pumpkin pie. I baked this pie with store bought pumpkin pure, but you can also make it from scratch by cooking 450 g of fresh pumpkin and them puréeing it through a sieve or with a blender. I found this recipe on bbc good food’s homemade...

Granola Bars

This time of year I usually bake a few cakes using my NFL helmet pan and decorate the cakes with lots of icing. But this year I’m doing something a bit healthier, but still really sweet and delicious. Granola bars. Easy to make plus you can use a large variety of ingredients to fit everyone’s taste – I went in on nuts.com for a bit of inspiration. And now that it is game day (Go Giants!) granola bars are also perfect snacks to bring along to a tailgate if you want to eat something that’s light and tasty. Ingredients

Cheesecake in a glass

I was walking trough our local grocery store the other day and spotted tray of new, fresh and juicy Danish strawberries. Yum, summer in  tray! I bought two trays and immediately had a couple of recipes with strawberries that I wanted to try out. One was a delicious cheesecake in a glas topped with lots of fresh strawberries. We had a couple of friends over for dinner on Tuesday night and that’s when I served this cheesecake. I like it because it’s easy and perfect for a dinner during the workweek. And this version is a bit healthier than your average cheesecake. It has no sugar or butter – but its still really really yummy and creamy. I found the...

Blueberry Muffins

I have made these blueberry muffins a few times now and it’s a hit every time. This time a baked a double portion as we had two events this weekend. First for Sillas’ game night with the guys on Friday and on Saturday we went to the park for a birthday party for sweet little two-year-old girl. The weather was amazing, and for the first time this year, it really felt like summer. And blueberries just scream summer, I think so at least. The recipe is from Hummingbird Bakery’s cakebook. I have yet to go wrong with a single recipe from that book. The cakes just always turn out amazing and are always a hit.  These muffins are light, sweet...

Mothers Day Brunch

This Sunday is Mothers Day in Denmark. The past few years we have invited my mum – and my dad of course – in for homemade brunch on Mothers Day. The first year we lived here, we had actually invited them in for brunch at a café in the city. But the day before we changed our minds and decided to make it a more cozy affair and make it a homemade brunch. So it was a surprise to my mum when she walked into the apartment and the table was set for brunch with all the works. And she loved it; she was so happy and said that that was really what she wanted instead of going out. So...

Pancakes with strawberry syrup

Another weekend- another batch of fluffy pancakes. These are the best pancakes I have ever made. It’s a big statement I know, but they just turned out perfect. And the recipe it very simple and easy, so this will be the basic recipe I will use from now on. I found the recipe on the food section of BBC’s homepage and made a few changes here and there, like adding vanilla. I love vanilla and add it to a lot of the things I bake. You can – almost – never have too much vanilla. They are just plain and basic pancakes, so I wanted to serve them with a new kind of syrup. I made strawberry syrup. You can...

Blueberry Pancakes

One of the many things I love about the weekend is sleeping in and getting up to make a stack of pancakes for a late breakfast. I like to try different variations of pancakes and last weekend I made classic blueberry pancakes. I used organic frozen blueberries because I can’t get good fresh ones this time of year. That’s why it kind of looks like I’ve made black current pancakes (something to actually try out another day…)  So if they had been in season, I would have used fresh blueberries. So here’s a recipe if you want to spoil someone you love with pancakes for breakfast this weekend.

Southern style pulled pork – a Jamie Oliver recipe

Ok, so I said from the beginning of my Jamie Oliver project, that I didn’t have a deadline for when I would have cooked and tried all of the recipes in Jamie Oliver’s America cookbook. But at this rate I will be a very very old lady before I’m done. So I am hereby trying to kick-start the project once again. I love a good pulled pork sandwich, and this recipe is one of the reasons that I wanted to do this project in the first place. So when I found some shoulder of pork at the supermarket, I decided that it was time to continue the project. It’s not a very difficult recipe, it’s just very time consuming, so...

Mini cupcakes with vanilla and liquorice root powder

Here’s another recipe for a sweet dish I made for the baby shower. Again its vanilla cake, but this time the frosting is flavored with liquorice. I love liquorice, especially black salty liquorice, it’s the best! But that would be a bit much for these delicate mini cupcakes. So instead I used liquorice root powder, which is nice and sweet -and the liquorice flavor is quite subtle for those of you that don’t like liquorice. They turned out great, and looked so cute. A perfect little mouthful. I feel like baking something else with liquorice now… Ingredients;

Poaching eggs

When I lived in New York I often had eggs benedict when I went out for brunch with my friends. It really is a perfect brunch dish – especially after a night out. I have never made eggs benedict, mainly because I was a bit weary of the whole poaching eggs process. But yesterday I decided to learn how to do it. And bought two large cartons of eggs and poached one egg at a time. And I was happy to discover that it wasn’t as difficult as I had feared. So Sillas and I had eggs benedict for dinner yesterday. It might be a brunch dish, but I can tell you that it works just fine for dinner as...
