Whenever I heard the words ‘vanilla cupcakes’ I always thought “ehh boring and not very interesting” But after baking and tasting these vanilla cupcakes, using a recipe from my Hummingbird bakery cakebook, I have been proven so wrong. Valentines’s Day chocolate cupcakes with raspberry cream cheese frosting

I recently bought a yummy natural raspberry extract, and decided to use it for a raspberry frosting. And what goes really well with raspberries? Chocolate. And I hadn’t baked cupcakes in a while, so I decided to make chocolate cupcakes with raspberry cream cheese frosting. I also love brown and pink colors together, so it was only fitting that I make a batch for Valentines Day. Tuesday was a very good but long day. I was up at 6 Am and off to work till 4 PM, but then I going to a cupcake course at ‘Specialkøbmanden’ in Lyngby. Specialkøbmanden (specialty merchant) is such a wonderful store for a cake nerd like myself. They sell cake decoration supplies and accessories for cakes and a well of spices, teas and coffees. Marzipan cupcakes with strawberries and cream

I made these cupcakes a few months back but never put them up here because I really wasn’t happy with the pictures. But the cupcakes were so delicious and good that I have now decided to put them up anyway. I’ll make them again another time and make sure to take better photos. I found this recipe on another blog that I read regularly. Its an adaptation of a traditional Danish summer cake. I absolutely love it! Hummingbird bakery rose cupcakes

Here’s another recipe from my birthday dinner. Cupcakes made with rose water. I found the recipe in my beloved Hummingbird bakery book, Cake Days. It is definitely an acquired taste, rose water. I do like it, but not in too large doses. Perhaps I put too much in this batch and will be careful not to do that another time in order to get a more subtle and delicate taste of rose. Also, I’m going to change the frosting recipe by adding cream cheese, I think that it will work much better and not be as sweet as it is in the original recipe. The other day I was visiting my best friend Jette. She recently became a mum for the first time, to the cutest little baby boy. So I thought I’d surprise her with a  batch cupcakes when I visited them. I baked banancupcakes which I have made before but chose to make cream cheese frosting instead of chocolate. Some time ago I bought blue food coloring from Dr. Oetker, so the frosting should of course be blue, or rather turquoise as it turned out.

Marshmallow Cupcakes

  This past year I have been following a handful of food blogs and was so inspired that I thought I would explore the blog world myself, as a blogger. I began to think about the recipe that would be my first on the blog. Lately I have been using Hummingbird Bakery’s cookbook every time I was in a baking mood, so naturally today’s recipe come from that book too.
