Quinoa salad with avocado, tomatoes and roasted almonds

  This is one of Sillas’ favorite dishes. I made it for dinner last year as a side dish to salmon steak – that I thought would really ‘sell’ the dish. But it turned out that it was the quinoa salad that he absolutely loved. I like it too, its very simple, healthy and quick. Simple and easy chickpea Salad

This salad is super easy with rather few ingredients, and still very tasty and a good side dish for a dinner party or a tapas get together, which is what I used it for this past weekend. Ingredients; 2 tins of chickpeas, approx. 450 g, drained and rinsed Juice of 1 lemon 3 tbsp. of olive oil 1 scallion, finely chopped 

Fall chopped salad

This is a wonderful, flavorful salad perfect for fall. I served it for my birthday dinner this weekend with prosciutto wrapped salmon and my friends loved it. My friend Gry kept saying how surprised she was by all the different flavors there was in one salad. Ingredients 1 large head of romaine lettuce, chopped Half a cucumber, chopped into bite size pieces 2 medium pears, chopped 1 cup dried cranberries 1 cup chopped walnuts 8 slices thick-cut bacon, crisp-cooked and crumbled 100 g of feta cheese, crumbled Instructions


Warm bulgur salad with vegetables and feta cheese

This is a great warm salad. It’s a real fall dish; fresh, healthy and a perfect side dish. We had it with pork chops, but chicken or steak would also work great. Ingredients; 3 dl of bulgur A cup of miniature or cherry tomatoes

Spicy meatballs with rice & veggie salad

These spicy meatballs are really delicious and so easy to make. Feta cheese and jalapenos are both things I don’t eat very often, but in this dish they are perfect, I eat way too many. And the rice salad is a nice fresh alternative to a warm side dish. Here’s how you make it; 

Salad with yellow mini-tomatoes

So I happened to buy mini tomatoes again, this time yellow. I was home alone this evening, so  I used them in a salad I had this evening with a good steak. I love a good steak. The tomatoes do not taste as strongly of tomato as the red mini tomatoes, and are maybe a bit more sour, but are still really good and fresh.

Jamie Oliver’s potato salad with avocado and watercress

We had a small portion of potatoes left over in the fridge from the other night, so for dinner last night I also made a potato salad with avocado and watercress. A recipe I have from one of my many Jamie Oliver cookbooks. It’s easy, tastes great and is fresh.

Roasted chicken with avocadosalsa and butter beans with tomato & basil

  I’m slowly working my way through the ‘Lækkermad 80/20’ book. The other day we had some delicious roasted chicken with avocadosalsa and butter beans with tomato and basil. Very tasty, healthy and filling. Chicken pieces were about 50 minutes in the oven at 200 degrees. I had the spice them with salt, pepper, round spice and sweet paprika. Simple, but tasted great. 

Beetroot – cabbage salad

  I am really happy with my ‘Lækkermad 80/20’ cookbook. There are so many good salads and delicious marinades and dressings. For lunch today I decided to make Beetroot-cabbage-salad with a lovley lemon / olive oil dressing. A good and fresh salad.
