Oatmeal cookies with raspberries & white chocolate

A few months back our little family visited a café and I bought a few cookies for dessert, just because they were on display rights by the cash register. I’m an easy target that way. Anyway, they were so good that I wanted to recreate them. I love a nice and chewy cookie, so I decided to go with an oatmeal cookie. I’m pretty happy with the result and will definitely bake them again soon for the holiday. And then I’ll add more of all the spices so they will be packed with holiday flavor. This batch makes about 30 small cookies.

Granola Bars

This time of year I usually bake a few cakes using my NFL helmet pan and decorate the cakes with lots of icing. But this year I’m doing something a bit healthier, but still really sweet and delicious. Granola bars. Easy to make plus you can use a large variety of ingredients to fit everyone’s taste – I went in on nuts.com for a bit of inspiration. And now that it is game day (Go Giants!) granola bars are also perfect snacks to bring along to a tailgate if you want to eat something that’s light and tasty. Ingredients

Cheesecake in a glass

I was walking trough our local grocery store the other day and spotted tray of new, fresh and juicy Danish strawberries. Yum, summer in  tray! I bought two trays and immediately had a couple of recipes with strawberries that I wanted to try out. One was a delicious cheesecake in a glas topped with lots of fresh strawberries. We had a couple of friends over for dinner on Tuesday night and that’s when I served this cheesecake. I like it because it’s easy and perfect for a dinner during the workweek. And this version is a bit healthier than your average cheesecake. It has no sugar or butter – but its still really really yummy and creamy. I found the...

Hazelnut nougat and chocolate chip cookies

This weekend was full of fun birthday celebrations. First a great and really fun 30th birthday party on Saturday and then a sweet and cozy 5th birthday party on Sunday. So a wonderful and eventful weekend with great great company. Instead of bringing flowers as a hostess gift I decided to bring a batch of homemade cookies on Sunday. The recipe is from my new cookbook ‘happiness is chocolate’ – a Danish chocolate cookbook by two food – or should I say, chocolate bloggers.  I have followed their blogs for a couple of years and absolutely love their new joint cookbook. I added a bit of vanilla to the recipe because you can almost never go wrong with a bit of...

Homemade Salsa

Here’s a quick and easy recipe for a great salsa. We had Mexican food for dinner the other day – healthy burritos with chicken, lettuce, three bean salad, guacamole and salsa. Yum, I love Mexican food. Ingredients:

Greek Yogurt dish for breakfast or for dessert

This is so simple, fresh and just yummy. I made it for myself last Saturday for dessert and then again when Sillas and I had it for breakfast Sunday morning. And it works perfect for either course. I used the mint syrup that I made last week. I don’t really know why, but it brings out the almonds flavor, it brilliant.  And the dish is so quick and easy that you could easily use it as a last minute dessert. You don’t have to just use blueberries, any berry will work.  Here’s what you need and what to do:

Chunky Monkey Ice cream

I got an ice cream machine for Christmas in 2011 but haven’t gotten around to using it – until now. Better late than never I guess. I wanted to make two kinds of ice cream; one flavor that I chose and one that Sillas chose. I looked through my amazingly good looking ice cream book – ‘The Icecreamist’ and chose peanut butter ice cream, and Sillas’ choice was Chunky Monkey – Banana ice ream with chocolate and walnut chunks. I made Chunky Monkey first. I substituted walnuts for pecan nuts and also added some banana aroma to really get a good banana taste. The ice cream turned out alright, but I think that I left it in the ice cream...

Salted Almonds

We’ve had quite a few sweets snacks this past week, so I thought that it was time for a little change. One of Sillas’ friends is coming over to watch tonight’s Champions league match between FC Barcelona and AC Milan, so I’ve made a little football snack – salty almonds. Its a great snack, simple and just so wonderful and yes salty. Who doesn’t like salted almonds…

Jamie Oliver’s date shake

My Jamie Oliver domestic project continues. This time with a lovely and sweet afternoon shake. Very simple, few ingredients and yet so so tasty. Dates are so wonderful, full of flavor and natural sweetness . I sometimes eat them as snacks, but this is the first time I’ve used them in a drink. And I love it, definitely not the last time I’ve made it. I think that it would work well served in a small glass for brunch. Ingredients;

Marzipan Rum Logs aka Rum Balls

I love rum balls ( not too fond of the name though…); they are packed with chocolately rum goodness. But I hardly ever buy them and have never made them myself. That is until today. Here in Denmark we have, what we call tree logs. Basically they are rum balls formed as rolls/logs, covered with a layer of marzipan and each end dipped in dark chocolate – So delicious! And that’s exactly what I made today. I had seen another blogger make them a few weeks back, and that’s when I decided to give it a go myself. I changed the recipe a tiny bit, just because I had forgotten to buy enough dark chocolate and had some soft nut...
