Salad with broccoli, avocado, walnuts and parsley

Tonight we had a salad from my Lækkermad list. It is super easy to make, and is very healthy.
Ingredients:
1 head of broccoli
1 large handful of walnuts
1 avocado, cut into bite-sized chunks
A bunch of parsley
Marinade / Dressing;
1-3 cloves of garlic, depending on how crazy you are about garlic
juice of half a lemon
4 tbsp. of olive oil
Sea salt
Method:
Cut the broccoli head into small florets and blanch them. Pour ice-cold water over to stop the cooking.
Cut the avocado into bite-sized chunks, chop the parsley roughly and mix with broccoli and walnuts in a bowl.
Make the dressing by mixing finely grated garlic, lemon juice, olive oil and sea salt in a small bowl.
The recipe says that you have to mix everything together then, but I chose to have the dressing on the side, so you can choose how much or little you want.
I fried a couple of chicken breasts in a little sesame oil to eat with the salad.
It is a super healthy and hearty salad, and it’s packed with vitamins, fibers and minerals, including iron. from the parsley.
