Healthy salmon wraps

I made these salmon wraps a while back, but have forgotten to put them up here on Ambrosia. I found the recipe in the cookbook ‘Lækkermad’ (that’s Danish for delicious food)
It’s a tasty and healthy dish full of good vitamins and minerals. I might swap the tortilla for Vietnamese rice paper, next time I make this dish. I think it will work better. But that’s not to say that this way wasn’t good though, each to their own.
Ingredients;
4 salmon steaks
2 avocadoes
2 carrots
1 cucumber
4-6 spring onions
3-4 dl. of been spouts
1 cup of fresh basil leaves
A couple of handfuls of spinach leaves
8-10 tbsp. of Tamari (soy sauce)
2 ½ cm of fresh ginger, finely grated
Juice from one lemon
3 tbsp. of sesame oil
6 tortilla pancakes/ or rice paper
Procedure;
Steam the salmon steaks, cut into chunks and set aside to cool.
Cut the carrots and cucumber into long thin strips. The spring onions into to small pieces and the avocado into either long strips or cubes.
Next make the dressing by combining tamari, grated ginger and sesame oil.
Now all you need to do is prepare the tortilla or rice paper and then assemble the wraps.
If you’re serving this to guests, you can arrange everything on beautiful platters, the dressing in small bowls and let the guests make their own wraps as they like.
