Homemade Chai Tea Concentrate

Whenever I go to a café I always choose one of two drinks – coffee latte or chai tea latte. I love the sweet and spiced flavor of a good cup of chai latte. A few years back I tried to make a pot of homemade chai, but it didn’t turn out great; too weak and not enough flavor. But now I found a great recipe for chai concentrate online, here and decided to give it a go again. And I’m so happy that I did. Because it turned out just right, full of chai spiced flavor. I made myself a glass of chai latte using the concentrate, and I am sitting here a very happy gal. Ingredients;

Homemade peanut butter ice cream, an Icecreamist recipe

The second batch of ice cream was peanut butter. The recipe is from my ice cream book ‘The icecreamist’ which I bought last summer in London. I love this book. It has so many amazing ice cream recipes; the traditional as well as a bunch of new fun and interesting flavors. And now that I have finally begun my ice cream making adventure, I can’t wait to try out another recipe from this book. The peanut butter ice cream turned out fantastic, very creamy and full of flavor.

Chunky Monkey Ice cream

I got an ice cream machine for Christmas in 2011 but haven’t gotten around to using it – until now. Better late than never I guess. I wanted to make two kinds of ice cream; one flavor that I chose and one that Sillas chose. I looked through my amazingly good looking ice cream book – ‘The Icecreamist’ and chose peanut butter ice cream, and Sillas’ choice was Chunky Monkey – Banana ice ream with chocolate and walnut chunks. Salted Almonds

We’ve had quite a few sweets snacks this past week, so I thought that it was time for a little change. One of Sillas’ friends is coming over to watch tonight’s Champions league match between FC Barcelona and AC Milan, so I’ve made a little football snack – salty almonds. Delicate lime truffle covered in white chocolate

A few weeks ago I tried a piece of chocolate from a lovely box of assorted chocolates. Lime truffle covered with white chocolate. I had never tried that combo before. It was nothing less than amazing. So I wanted to re-create it. I used the same lime truffle as I used for my valentines chocolates from the other day. Now since the truffle is covered with white chocolate, these are very sweet, but they are still lovely and delicate.

Valentines’s Day chocolate cupcakes with raspberry cream cheese frosting

I recently bought a yummy natural raspberry extract, and decided to use it for a raspberry frosting. And what goes really well with raspberries? Chocolate. And I hadn’t baked cupcakes in a while, so I decided to make chocolate cupcakes with raspberry cream cheese frosting. I also love brown and pink colors together, so it was only fitting that I make a batch for Valentines Day. The recipe is from Hummingbird Bakery, but I added a few chocolate chips to the batter and the raspberry extract to the frosting. And the result was really delicious. Ingredients;

Valentine’s Day chocolates with Bailey’s cream

Valentines day and chocolates go hand in hand and Baileys is just a girls best friend right? I found this recipe on another blog last fall and have wanted to try it out for a while now, and Valentines Day is a perfect occasion for sweets like this. This recipe calls for Bailey’s but I think that you could add almost any liquor you’d like. Cointreau or Kahlua would work really well…yum…yes very well. Ingredients;

Homemade chocolates with white chocolate/lime filling

These are my new favorite homemade chocolates. The lime is so refreshing and these chocolates are just packed with flavor. People always talk about chocolate and orange being very complementary of each other, but I think that chocolate and lime work just as well. You could also add a bit of liquor to these chocolates, perhaps cognac or white rum. Ingredients;

Fresh February salad with apples, pomegranate and citrus dressing

This past Friday we had friends over for dinner. We kept it kind of light and made salmon with two salads; Sillas’ favorite quinoa salad and a new salad from a new cookbook I bought recently. It’s a Danish book called ‘amazing salads – all year round’ and it really is amazing. Full of great salad and side dish recipes. I especially love that there are recipes for fall and winter, because I usually can’t figure out what to put in a salad. The salad I chose for our dinner is a February salad called Gils Salad.
