Homemade chocolates with white chocolate/lime filling

These are my new favorite homemade chocolates. The lime is so refreshing and these chocolates are just packed with flavor. People always talk about chocolate and orange being very complementary of each other, but I think that chocolate and lime work just as well. You could also add a bit of liquor to these chocolates, perhaps cognac or white rum.
Ingredients;
150 g of dark chocolate
1 dl of double cream
25 g of butter
300 g of white chocolate
Zest from 1 lime
Procedure;
Start by placing your chocolate molds in the freezer. The chocolate will harden faster this way.
Melt the dark chocolate and brush the molds, making sure you cover the edges – so there are no holes where the filling could spill out. Keep about ¼ of the chocolate for the ‘lids’ later. Place in the freezer or fridge again.
In a saucepan, heat the butter and cream. Remove from the heat. Break the chocolate into small pieces and add to the pan. Stir until the chocolate has melted. Finally add the lime zest. Let it cool in the fridge for about two hours before filling the chocolate molds – but only to about 2 mm from the top.
Last step is adding a lid to the chocolates by filling the molds with the remaining melted dark chocolate. Place back in the fridge- or freezer if you’re in a hurry and let it set.
Store in an air-tight container.
