Greek Yogurt dish for breakfast or for dessert

This is so simple, fresh and just yummy. I made it for myself last Saturday for dessert and then again when Sillas and I had it for breakfast Sunday morning. And it works perfect for either course. I used the mint syrup that I made last week. I don’t really know why, but it brings out the almonds flavor, it brilliant.  And the dish is so quick and easy that you could easily use it as a last minute dessert. You don’t have to just use blueberries, any berry will work.  Here’s what you need and what to do:

Spelt Grain Salad with Dried Apricots and Toasted Pine Nuts

It’s a new week, almost a new month and we have decided to try a new way of eating –with lots and lots of salads – after all we have to make some room for all of the delicious food we’ll be eating this summer in Rome. A few weeks ago I went to Torvehallerne here in Copenhagen with my good friend Gry. Torvehallerne is an amazing food market with lots and lots of little stores full of delicious food. They have everything from fresh fish, meats, cheeses, chocolates, baking goods and spices. I love it. And so does Gry, so every once in a while we have to have a little trip to Torvehallerne. Thai red meatball curry

This is one of my favorite dinner dishes to cook. It has lots of flavor and just enough heat for my taste. It has a lot of things I love in one dish; fresh basil, beef, bamboo shoots and chili. So good! And it’s quite quick to cook and doesn’t have too many ingredients. The red curry paste really adds a lot of flavor to the dish. I recently bought an amazing cookbook called American Pie. Its really great because it has all sorts of recipes for American baking goods, but with the metric system measurements – something that can be a little difficult to find when looking for real authentic American recipes. The book is written by two American ladies who live here in Denmark, which is perfect, because they know exactly where to buy the best ingredients and also have tips for great alternative ingredients. Buttermilk pancakes served with mascarpone cream

I love weekend mornings when I have nothing to do but create something yummy in the kitchen for Sillas and I. Having the time to cook or bake something delicious is the best. On Sunday I baked light and fluffy buttermilk pancakes and chocolate chip cookies. Instead of whipped cream for the pancakes, I made a little mascarpone cream spread. Lovely creamy and sweet.
