Buttermilk pancakes served with mascarpone cream

I love weekend mornings when I have nothing to do but create something yummy in the kitchen for Sillas and I. Having the time to cook or bake something delicious is the best.
On Sunday I baked light and fluffy buttermilk pancakes and chocolate chip cookies. Instead of whipped cream for the pancakes, I made a little mascarpone cream spread. Lovely creamy and sweet.
You don’t need a lot of ingredients for these pancakes and they are super easy to make. Perfect for Sunday mornings.
Here’s the recipe for buttermilk pancakes;
Ingredients:
250 grams of flour
25 grams of sugar
1 tsp. salt
2 tsp. baking soda
1,5 tsp baking powder
2 Egg yolks
5 dl. Buttermilk
Method:
Mix the dry ingredients with the egg, then stir in the milk, a little at a time. Stir until the batter is smooth and without any lumps. Let it rest for about ½ hour before baking the pancakes on a pan on medium heat.
Ingredients for mascarpone cream:
250 g of mascarpone
zest of half a lemon
2 tsp. of vanilla sugar
Method:
Its very simple. Mix the three ingredients in a bowl and add more or less zest or vanilla sugar to taste. Yummy!
