Layered marzipan cake with berries

We’ve had a few Internet issues, so I haven’t been able post anything here on Ambrosia, and I’ve missed it. I love my little blog. But now the Internet is working again and I’m ready with a yummy recipe – Birthday cake!

It was Sillas Birthday this Wednesday and we had a few friends over for dinner. The Birthday boy chose the main course – gullash with mash potatoes, same choice as last year. I took a day off from the office and worked from home so I had plenty of time and to cook and bake all day long. After all a good gullash needs a few hours to simmer in all its goodness. Mine simmered for about 4 hours and turned out great, full of flavor and tender meat.

For dessert I made a layered marzipan cake with raspberry cream filling and topped with lots and lots of berries.  Its such a perfect summer cake. It took a while to make but definitely worth it.

Birthday cake step by step


I made two separate batches instead of just doubling the amount. This way I was sure to get two even size cakes.

Marzipan cake:

300 g marzipan

150 g soft butter

Zest of 1 lime

3 eggs

4 tbsp. of plain flour

Raspberry Cream Filling:

125 g Raspberry Cream Fix

250 g whipping cream


1 ready made marzipan icing sheet – I bought this one from Odense Marcipan

Mascarpone Cream:

250 g of mascarpone

¼ liter whipping cream

2 tbsp. icing sugar

Zest from one lime

On top:

White chocolate

300 g strawberries

200 g blueberries

100 g raspberries

a few blackberries

Cake with marzipan and barries


Turn the oven on to 175 degrees C.

Grate the marzipan and add to a bowl. Stir in butter and lime zest. Add the eggs one at a time. Finally add the flour and stir until the batter is smooth. Pour the batter into a round greased or Teflon baking dish, about 24 cm. Bake the cake in the middle of the oven for 20 to 25 minutes. Leave to cool completely.

-Repeat this whole process for another layer.

Raspberry cream fix

Once the cake layers are completely cool, make the raspberry filling. I bought a pack of cream fix in a cake shop. Its super easy. All you do is whip 250 g of cream, set aside in the fridge to keep cool. Then add water to 125 g. of cream fix. When it is well-incorporated fold in the whipping cream a bit at a time. Once its well mixed, place the first cake on a plate and add the cream mixture on top in an even layer. Place in the refrigerator for about 30 minutes to set. Take the plate out of the refrigerator and place the second layer on the cream.

Now take your ready-made marzipan sheet and cut out a long rectangular piece, making sure that it is as wide as the cake is tall, so it will cover the entire sides of the cake. Wrap the marzipan around the cake.

Make the mascarpone cream by whipping the cream until you have soft peaks.  Fold in the mascarpone cream. Finally add icing sugar and zest. Spread on top of the cake.

Rinse the berries and remove the stem from the strawberries. Now scatter all of the berries on top of the cake.

Before serving, shave some white chocolate and sprinkle over the cake.

And there you go. It’s a bit of a process, but definitely worth it! Yum.
