Panna Cotta with Strawberry Coulis

This is a dessert that I have wanted to make for quite a while. It’s just so good; simple, creamy, sweet and full of variation possibilities. The reason I hadn’t tried this dish out yet, was that working with gelatin scared me so much. I had heard all of these horror stories, where the dish would end up stringy and just wrong. But there are so many recipes out there with gelatin, and I would like to cook them all, so I just had to get over my gelatin fear. And I am so glad that I did, because I had no problem working with it at all. My panna cotta turned out great. Creamy and smooth and just yummy....

Thai Green Curry Soup

Yesterday I traveled back to my teenage years when I once again had braces put on. At my own free will too. I have wanted to straighten my front teeth for quite a few years now and yesterday was the first step in doing so. But my goodness, I had forgotten how uncomfortable it is and how much your whole head hurts. Eating isn’t much fun anymore, unfortunately. It hurts and I can’t bite down properly, so soup will be on out menu quite a bit from now on. This soup is amazing; creamy, hot and spicy and packed with flavor. I love Thai green curry dishes, so this soup is perfect for me at the moment.

It was my last day at ALK Nordic last Friday. I had worked for ALK a few years back and this was a temp job for a colleague on maternity leave, so it was great to be back again and quite sad that could not stay longer this time. Marzipan Buns

These marzipan buns are dangerously good. I recently began to work out more regularly and eating a bit healthier. But that didn’t stop me from eating 2 and a half of these yesterday…They are just so good! Substituting cinnamon for marzipan works great for this recipe. I also used regular wheat flour instead of spelt flour this time, and it really does make a different. The dough proves much better and the texture is just better for this kind of bread. I baked them a few different ways; individually on a baking tray and stacked together like a little bread or cake in an ovenproof dish. It’s officially autumn! I have mixed feelings about it; on one hand I’ll miss long summer nights, BBQ’s, picnics in the park and warm, sunny weather, but on the other hand, there’s something so great about cozying up with blanket – and your guy- on the sofa with a cup of tea and candles lit in the window while the rain trickles down the window.
