Smoked salmon mousse

Salmon is by far my favorite fish and I often serve it as an appetizer. I like that’s it so diverse. You can fry it, steam it, poach it, smoke it, mousse it…and that’s what I did last night when we had a couple of friends over for dinner and a card game. I made a mousse with smoked salmon and skyr. Skyr is an Icelandic cultured dairy product similar to strained yogurt. High in protein and low in fat and carbs. If you can’t find skyr, you could just use sour cream or yogurt. This dessert was inspired by a picture I saw on another blog.I thought that it looked amazing and like a beautiful dessert to serve at a fancy dinner party. Mini Meringue Kisses

I saw a photo of an ice cream dessert with tiny meringue kisses sprinkled on top and thought that it looked really cute. So I wanted to make my own little batch of meringue kisses so I have them ready for a dessert. Easter is around the corner and we have a few dinner parties planned, so these little kisses will come in handy. I decided to add a bit of colour to them and a little taste too. They are very easy to make, you just need a bit of time on your hands, first for the baking part and then for the drying out process. Ingredients: (makes 135 mini kisses)

Hazelnut nougat and chocolate chip cookies

This weekend was full of fun birthday celebrations. First a great and really fun 30th birthday party on Saturday and then a sweet and cozy 5th birthday party on Sunday. So a wonderful and eventful weekend with great great company. Instead of bringing flowers as a hostess gift I decided to bring a batch of homemade cookies on Sunday.
