Smoked salmon mousse

Homemade salmon mousse

Salmon is by far my favorite fish and I often serve it as an appetizer. I like that’s it so diverse. You can fry it, steam it, poach it, smoke it, mousse it…and that’s what I did last night when we had a couple of friends over for dinner and a card game. I made a mousse with smoked salmon and skyr. Skyr is an Icelandic cultured dairy product similar to strained yogurt. High in protein and low in fat and carbs. If you can’t find skyr, you could just use sour cream or yogurt.

It’s a great appetizer to make ahead so you can focus on the main course or the dessert.

I had made a large portion, and we had a lot left over. Never a bad thing! So we had smoked salmon mousse for lunch today, yum.

Ingredients:

400 g. of smoked salmon

4 tbsp of sour cream or skyr

1 tbsp. of mayonnaise

Juice from half a lemon

Salt & pepper

Method:

Remove skin from the salmon filet and place the fish in a bowl.

Break up the salmon filet using a fork.

Stir in sour cream and lemon juice.

Add salt and pepper to taste.

Serve with fresh vegetables such as asparagus and cheery tomatoes and a bit of watercress.

    (excuse the pun) that headscarves are old hat (there I go
    again, just one more pun. Someone decides it is time for it to start sending their potential customers a great gift.
    You will probably be a conniving secret Santa where your gift will likely be envied by the people around because it’s not suitable, but even unusual.
