Eos I don’t know how long Eos has been on the market, but I started to notice their cute lip balms about a year ago. They are super cute and 95% organic. And the pretty colors and sweet flavors just appeals to the girly girl in me. My favorites are honeysuckle Honeydew and sweet mint. Sillas gave me an Easter basket full of Eos lip balms this year. Danish summer strawberry pie

We celebrated Sillas’ birthday this past weekend with a big party in our apartment. We had hoped that the weather would be on our side so we could all just have a party in a park, but the Danish summer has a split personality this year (like so many other years) and day was a mix of rain, wind and yes a bit of sun too. I really like a good dinner party, either hosting it or being a guest. Hosting it is fun because you can plan out the menu (something that I really enjoy), set a beautiful table, mix a special welcome drink and being a girl, find a pretty dress and do my hair. And luckily for me, I have a boyfriend who also really enjoys hosting a dinner party, so we have people over for dinner, more or less fancy every now and then. Brownie cupcakes with Orange cream cheese frosting

I love a good brownie. Its rich, chewy and often crunchy from a bit of nuts. And you can combine it with so many things; ice cream, fruit, coulis, whipped cream or  a variation of mousses. And its easy to whip up a great brownie as well, so I have baked a lot of brownies over the years. But I had never baked brownie cupcakes. So last weekend when I visited my best friend and her family, I thought that it was about time that I made a batch of brownie cupcakes.  I like the combination of orange and chocolate so I made orange cream cheese frosting as well.

Homemade Iced Tea

There are a lot of different iced teas out there. Some are too sweet and very synthetic, others are close to the real thing and then some resembles nothing close to iced tea. The best iced tea I have tasted was at Hard Rock café. It was real tea with liquid sweetener on the side. It was delicious. I don’t now which type of tea they used though. Does anyone else know this? Last weekend I made my own iced tea. I used Pukka’s Refresh tea with peppermint, liquorice and fennel. But you use whichever tea you like. White chocolate panna cotta with mango coulis

Right now I’m sitting on my couch watching the opening ceremony of the World Cup. I’m a football gal and have been since 1992, so these 4 coming weeks are very exciting for me. Lots and lots of top matches with the best football countries in the world – a long with a few not so good ones, lets be honest. But what I also love about the world cup is that there is always one under-dog team, which over performs and becomes the team that everyone loves. I wonder who it will be this year? Strawberry & Blueberry tart

I have had such a great weekend, and it’s far from over. Again we had a long holiday weekend here in Denmark, so I have had the day off since Thursday and don’t have to back to work until Tuesday. So basically it’s a mini holiday. Spring is full of days off here and there and I love it. Extra days off also means extra time in the kitchen to create more things I love. I saw this recipe on another blog and thought that it was really pretty, so I wanted to re-create it, with a few changes to make it my own. It’s a twist on a traditional Danish strawberry tart.

Raspberry and limeade

  How beautiful is the colour of this raspberry-limeade? I wanted to try this recipe out when I saw that my local grocery store had fresh raspberries on sale at a very good price this entire month. The weather today has been quite weird really. It started out with beautiful sunny summer weather, so I decided to take a long walk around my neighborhood of Frederiksberg. Lots of people were out enjoying the weather, sitting outside cafés with a cup of coffee and a little pastry. Danish strawberry buttermilk soup – aka koldskål

Summer in Denmark means eating lots and lots of koldskål, which is a cold buttermilk soup with vanilla and lemon. There are lots of ready-made variations in the grocery stores, some are better than others so the past few years I have made my own. It’s really easy to make and I don’t have to worry about which preservatives have been added. And I can also make my own variations. Like this strawberry version which is so much better than the store bought strawberry version. You just can’t beat fresh strawberries.
