Chocolate cherry cupcakes

I was looking through one of my kitchen cupboards the other day and found a jar of cherry sauce. I love cherries and haven’t cooked with them in a while, so I decided to make a batch of chocolate cherry cupcakes for the weekend. My oldest son hadn’t tried cupcakes yet but has been talking about them for a while because of a book he has with pictures of cupcakes. So I figured it was about time that he got to have his very own. He loved it, and so did the rest of the family.
I used preserved cherries for this recipe, but you could just as well use fresh or frozen.
Here is the recipe:
Makes 12 cupcakes
Ingredients
100g flour
20g cocoa powder
140g cane sugar
1.5 tsp baking powder
A pinch of salt
40 g of unsalted butter, room temp.
1.5 dl whole milk
1 egg
1 vanilla pod
100 g cherries
4 tbsp. cherry sauce
Method;
Preheat oven to 170 ° C.
Add flour, sugar, cocoa powder, baking powder, salt and butter in a bowl and well mix together.
Slowly add half of the milk while stirring.
In another bowl, beat the egg and remaining milk.
Pour the egg mixture into the flour mixture. Stir till everything is well combined.
Add the cheery sauce.
Fold in the cherries with a spoon or spatula.
Pour the batter into cupcake cups and bake in the preheated oven for 20-25 minutes.
When the cupcakes are done allow to cool completely before decorating with frosting.
Cherry cream cheese frosting
Frosting ingredients;
300 g of icing sugar
100 g of unsalted butter, room temperature
125 g cream cheese, cold
3-4 tbsp cherry sauce
a few drops of food coloring
Method:
Mix sifted icing sugar and butter in a bowl. When you have a ‘sandy’ consistency add the cold cream cheese and mix until you have a smooth consistency. Finally add the cherry sauce and the food coloring.
Decorate your cupcakes and enjoy!
