Autumn is here! And as much as I love summer and will miss the warm(ish) weather, long summer nights and trips to the beach I also look forward to the new season. Spending evenings at home wrapped in a warm blanket with cup of hot tea and a piece of pie. Granola Bars

This time of year I usually bake a few cakes using my NFL helmet pan and decorate the cakes with lots of icing. But this year I’m doing something a bit healthier, but still really sweet and delicious. Granola bars. Easy to make plus you can use a large variety of ingredients to fit everyone’s taste – I went in on nuts.com for a bit of inspiration. I was walking trough our local grocery store the other day and spotted tray of new, fresh and juicy Danish strawberries. Yum, summer in  tray! Blueberry Muffins

I have made these blueberry muffins a few times now and it’s a hit every time. This time a baked a double portion as we had two events this weekend. First for Sillas’ game night with the guys on Friday and on Saturday we went to the park for a birthday party for sweet little two-year-old girl. Mothers Day Brunch

This Sunday is Mothers Day in Denmark. The past few years we have invited my mum – and my dad of course – in for homemade brunch on Mothers Day. Pancakes with strawberry syrup

Another weekend- another batch of fluffy pancakes. These are the best pancakes I have ever made. It’s a big statement I know, but they just turned out perfect. And the recipe it very simple and easy, so this will be the basic recipe I will use from now on. Blueberry Pancakes

One of the many things I love about the weekend is sleeping in and getting up to make a stack of pancakes for a late breakfast. I like to try different variations of pancakes and last weekend I made classic blueberry pancakes. I used organic frozen blueberries because I can’t get good fresh ones this time of year. That’s why it kind of looks like I’ve made black current pancakes (something to actually try out another day…)  So if they had been in season, I would have used fresh blueberries. Ok, so I said from the beginning of my Jamie Oliver project, that I didn’t have a deadline for when I would have cooked and tried all of the recipes in Jamie Oliver’s America cookbook. Mini cupcakes with vanilla and liquorice root powder

Here’s another recipe for a sweet dish I made for the baby shower. Again its vanilla cake, but this time the frosting is flavored with liquorice. I love liquorice, especially black salty liquorice, it’s the best! But that would be a bit much for these delicate mini cupcakes. So instead I used liquorice root powder, which is nice and sweet -and the liquorice flavor is quite subtle for those of you that don’t like liquorice. They turned out great, and looked so cute. Poaching eggs

When I lived in New York I often had eggs benedict when I went out for brunch with my friends. It really is a perfect brunch dish – especially after a night out. I have never made eggs benedict, mainly because I was a bit weary of the whole poaching eggs process. But yesterday I decided to learn how to do it.
