Chocolate cherry cupcakes

  I was looking through one of my kitchen cupboards the other day and found a jar of cherry sauce. I love cherries and haven’t cooked with them in a while, so I decided to make a batch of chocolate cherry cupcakes for the weekend. My oldest son hadn’t tried cupcakes yet but has been talking about them for a while because of a book he has with pictures of cupcakes. So I figured it was about time that he got to have his very own. He loved it, and so did the rest of the family. I used preserved cherries for this recipe, but you could just as well use fresh or frozen. Here is the recipe:

I really like a good dinner party, either hosting it or being a guest. Hosting it is fun because you can plan out the menu (something that I really enjoy), set a beautiful table, mix a special welcome drink and being a girl, find a pretty dress and do my hair. And luckily for me, I have a boyfriend who also really enjoys hosting a dinner party, so we have people over for dinner, more or less fancy every now and then. Brownie cupcakes with Orange cream cheese frosting

I love a good brownie. Its rich, chewy and often crunchy from a bit of nuts. And you can combine it with so many things; ice cream, fruit, coulis, whipped cream or  a variation of mousses. And its easy to whip up a great brownie as well, so I have baked a lot of brownies over the years. But I had never baked brownie cupcakes. So last weekend when I visited my best friend and her family, I thought that it was about time that I made a batch of brownie cupcakes.  I like the combination of orange and chocolate so I made orange cream cheese frosting as well.

Mothers Day Brunch

This Sunday is Mothers Day in Denmark. The past few years we have invited my mum – and my dad of course – in for homemade brunch on Mothers Day. The first year we lived here, we had actually invited them in for brunch at a café in the city. But the day before we changed our minds and decided to make it a more cozy affair and make it a homemade brunch. So it was a surprise to my mum when she walked into the apartment and the table was set for brunch with all the works. Vanilla cupcakes with raspberry cream cheese frosting

I made these cupcakes for a lovely bridal shower this weekend. Jill, the hostess, had arranged such a great shower for the bride to be. Lots of amazing decorations ,yummy food, cookies, cake, tea and mimosas. It was my first bridal shower and it was a wonderful afternoon. My contribution to the day was a batch of cupcakes. Vanilla cupcakes with raspberry cream cheese frosting to be exact. I added a bit of light pink color to the frosting so they matched the colors of the day. Ingredients: (makes 10-12 cupcakes)

Valentine’s Day Cupcakes

Happy Valentine’s Day! We don’t celebrate Valentine’s Day as much here in Denmark as in the US or other countries. But it is becoming more and more popular each year. I feel that people either love or hate Valentine’s day. People say that it’s just a commercialist holiday created by Hallmark and large corporations. But I like it. Flowers, chocolates and a good dinner – what’s not to like. Here are a few sweet cupcake recipes if you feel like baking something sweet for your love. Happy baking. 

Mini cupcakes with vanilla and liquorice root powder

Here’s another recipe for a sweet dish I made for the baby shower. Again its vanilla cake, but this time the frosting is flavored with liquorice. I love liquorice, especially black salty liquorice, it’s the best! But that would be a bit much for these delicate mini cupcakes. So instead I used liquorice root powder, which is nice and sweet -and the liquorice flavor is quite subtle for those of you that don’t like liquorice. They turned out great, and looked so cute. A perfect little mouthful. I feel like baking something else with liquorice now… Ingredients;

Vanilla cupcakes with pink rosewater frosting

I made these cupcakes for my friends baby shower. I have become really fond of vanilla cupcakes lately, and thought that they fit perfectly for this event. Simple, delicate and still full of sweet flavor. And of course I had to use a bit of pink color to really make the frosting pop. I have made rosewater cupcakes before, but thought that the taste of rosewater was a bit overpowering. So this time, I only added rosewater to the cream cheese frosting and it turned out fantastic. 

Earl Grey Cupcakes – regular and mini versions

A good cup of tea and a freshly baked cupcake go hand in hand. So when I found a recipe for Earl Grey infused cupcakes I had to try them out. And they did not disappoint. They are light and fluffy and with a light flavor of earl grey tea. From this batch I baked 12 mini cupcakes and 12 regular cupcakes. It is the first time I baked mini cupcakes, but not the last. They are just the cutest and perfect little cakes you can eat in one or two bites. Yum!

Red Velvet Cupcakes

The first time I tried a piece of red velvet cake was when I lived in New York. It was from a lovely little coffee shop around the corner from my apartment on East 4th street. And I loved it. It was pretty and delicious at the same time. Uhh they also had the best Iced Chai Latte in the world! That’s definitely on my list of things to enjoy whenever I get back to New York.
