Christmas coffee -Nespresso 2015 Limited Edition Variations

I usually think of the holidays and a tea or hot cocoa season, but this year Nespresso has created three Christmassy coffee varieties; Vanilla Amaretti, Ciocco ginger and Vanilla Cardamom. And they are so so delicious and they all smell and tastes so wonderfully of Christmas spices.

I was recently invited to participate in a dessert challenge by Nespresso and Kokkedal Castle. Desserts and coffee, a win win in my opinion, so I accepted and began to experiment with different recipes. I tried out a creamy coffee panna cotta, a chocolate and hazelnut cake with coffee caramel drizzle. But I finally decided on this Irish coffee cheesecake. I tested the recipe out 4 times, tweaking it here and there before I was happy with the result. So there was a lot of cake eating in our house these past few weeks. I realize now that it has been almost one years since I have posted anything here on Nilssons Ambrosia. Normally I would do my best to post at least one new recipe a week, so having gone almost a year without a single post is a bit extreme. Mini Meringue Kisses

I saw a photo of an ice cream dessert with tiny meringue kisses sprinkled on top and thought that it looked really cute. So I wanted to make my own little batch of meringue kisses so I have them ready for a dessert. Easter is around the corner and we have a few dinner parties planned, so these little kisses will come in handy. I decided to add a bit of colour to them and a little taste too. They are very easy to make, you just need a bit of time on your hands, first for the baking part and then for the drying out process. Ingredients: (makes 135 mini kisses)

  One weekend afternoon every other month a group of 5 bakerette friends with a passion for baking amazing cakes, macaroons, cupcakes and pastries are hosting a wonderful event called ‘Sweet Sneak’ in Copenhagen. Dinner at Søren K for Copenhagen Dining Week

Last night we had dinner at the restaurant Søren K at the Royal Library in Copenhagen as part of Copenhagen Dining week. And it was really great, delicious food, a beautiful view and the best company:  my handsome boyfriend. The restaurant had put together a wonderful three course menu for this week’s event. We’re going out tonight!

  When you mention week 7 in Denmark, people would always associate it with skiing and winter vacation. But for the past 4 years it has also meant Copenhagen Dining Week. I have never been a great skier, but this new tradition is something I can get on board with. During this week, Copenhagen is transformed into a restaurant festival. You have the opportunity to experience a variety of good restaurants at a fair price. The selected 3 course meals costs DKK 200 pr. Person (about 37 US$) and also includes a bottle of San Pellegrino (a co- sponsor of the event). Hosting a pink baby shower

  Along with a few friends, I recently hosted a lovely, pink and girly baby shower for our friend Louise. And my goodness I loved planning and preparing this baby shower. It was so much fun; planning the menu and little snack and decoration ideas. I knew that I wanted to bake cupcakes with pink frosting and decided on vanilla cupcakes with rosewater frosting. Lovley and delicate, perfect for a baby shower. It looked and tasted amazing. Nilssons Ambrosia – One Year Today!!!

    One year ago today, I posted my very first recipe on Nilssons Ambrosia. I had been reading a bunch of food and lifestyle blogs for a while and after a bit of encouragement from my boyfriend, I decided to start my very own food blog. And I am so so happy that I did.
